Fishmeal earns its palatability from a specific profile of free amino acids, nucleotides and volatile marine compounds. Plant proteins not only lack this profile — they add their own anti-nutritional off-notes: bitterness from rapeseed glucosinolates, beany notes from soy, astringency from tannins.
